Black Bean Soup

Enjoy your dinner with this black bean soup – perfect for a tasty meal.

I decided to make some black bean soup with my new Instant Pot so I started browsing recipes. I decided to combine several and use some of my previous (very little) experience. I wanted to use one of the no-soak recipes as a starter. I bought a bag of beans at Aldi.

I started by chopping up some red onions. I would also use some chopped garlic, black pepper, pink Himalayan sea salt, Cloves, Cumin, and Cayenne pepper.

I set the Instant Pot on Sauté and poured in a little virgin olive oil. I added the above ingredients and stirred for about 10 minutes.

I then poured in the rinsed black beans, 6 cups of chicken broth, and 2 one-pound cans of stewed tomatoes. (I took the photo before I added the tomatoes) I set the Instant Pot on Pressure Cook for 30 minutes. After it finished I let it vent itself for about 15 minutes before removing the lid.

Black beans, also called black turtle beans, are legumes, which are very popular in Latin American cuisine. They are versatile, cholesterol-free, high in fiber (15 grams per cooked cup), rich in protein (15.24 grams per cooked cup), and low in fat (less than a gram a fat per cooked cup).

The bean soup was delicious. I enjoyed every bite and can’t wait to eat some tomorrow at lunch. It is very hearty and filling.
