Among fish consumed in the United States, a small group of species overwhelmingly dominates the national diet, reflecting a combination of availability, aquaculture expansion, global trade, and consumer preference for mild flavor and convenience. In recent decades, salmon has emerged as the most consumed fish in the country,

a shift that reflects both changing tastes and the growing influence of international fish farming. Once largely associated with seasonal catches from the Pacific Northwest and Alaska, salmon has become a year-round staple due to the rise of farmed Atlantic salmon,

much of it imported from countries such as Norway and Chile. Its rich, distinctive flavor and reputation as a source of beneficial omega-3 fatty acids1 have made it especially attractive to health-conscious consumers, while its adaptability to a wide range of cooking methods—from grilling to baking to raw preparations—has further cemented its place at the top of

American fish consumption. Close behind salmon is tuna, which occupies a unique and enduring role in the American diet. Unlike salmon, which is often purchased fresh or frozen, tuna is most commonly consumed in its canned form, making it one of the most accessible and widely distributed fish products in the country. Its popularity dates back more than a century, when advances in canning technology transformed tuna into a household staple.

Although concerns about mercury levels have influenced consumption patterns in some populations, tuna remains one of the most consistently consumed fish across all age groups.

A second tier of commonly consumed fish in the United States includes species such as tilapia, Alaska pollock, and cod, each of which illustrates how supply chains and consumer preferences shape dietary habits. Tilapia, largely imported and farm-raised, has grown rapidly in popularity because of its affordability and mild, neutral taste, making it appealing to a broad audience that may be less accustomed to stronger-flavored fish. Alaska pollock,

though less familiar by name, is one of the most heavily consumed fish by volume due to its widespread use in processed foods such as fish sticks, breaded fillets, and fast-food sandwiches, embedding it deeply in everyday eating habits. Cod, long associated with traditional North Atlantic fisheries, remains a staple as well, valued for its flaky texture and adaptability in both home cooking and restaurant dishes.

The dominance of these few species underscores a broader pattern in American food consumption, where familiarity, consistency, and price tend to outweigh diversity. Despite the vast array of fish species available in U.S. waters and global markets, most consumers repeatedly choose the same handful of options, reinforcing their dominance year after year. This concentration is supported by large-scale aquaculture operations,

efficient international distribution networks, and the food industry’s reliance on standardized products, all of which ensure that salmon, tuna, and a select group of white fish continue to define what Americans most commonly eat when they choose fish.

Omega-3 fatty acids are a group of essential polyunsaturated fats that play a critical role in human health, particularly in the structure and function of cell membranes and in the regulation of inflammation throughout the body. The most important types for human physiology are alpha-linolenic acid (ALA), which is found primarily in plant sources such as flaxseed and walnuts, and the longer-chain eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are most abundant in fatty fish such as salmon, mackerel, and sardine; these latter forms are especially important because the body converts ALA into EPA and DHA only inefficiently.
